  Mac & Cheese with Caramelized Shallots 

3T butter
3 cups shallots
2 cups  elbow macaroni
1 1/4 cups half & half
2 1/2 tsp. hot sauce
2 cups extra-sharp cheddar cheese
1 1/2 T. flour
2/3 cup crumbled goat cheese

Preheat over to 400°F.  Caramelize shallots in butter, salt & pepper.  Meanwhile, prepare macaroni as directed.  Simmer half & half and hot sauce over medium heat.  Combine cheddar cheese and flour in a separate bowl, then whisk together with half & half mixture.  Return to simmer and add pasta.  Spread pasta mixture in a casserole dish, top with shallots and goat cheese and bake for 15 minutes.
